1/3 cup Dijon mustard
4 tsp paprika
2 tsp cumin
2 tsp chili powder
1/4 tsp cayenne pepper
14 baby red or white potatoes, sliced in half (unpeeled)
Preheat the oven to 400F and oil a roasting pan. Put the mustard, paprika, cumin, chili powder and cayenne pepper in a large bowl. Whisk to blend.
With your hands coat the potatoes evenly. Place the flat side down of the potatoes onto a well oiled roasting pan, leaving a little space between them.
Bake for about 45 minutes to 1 hour until potatoes are fork tender. Brush on some melted coconut oil all over potatoes before serving. Serves 4
