Oprah's Roasted Dijon Mustard Potatoes

This recipe is from Rosie Daley, who was at one time Oprah’s Winfrey’s personal chef. She says this was one of Oprah's favorite dishes. One taste and you will know why!


olive oil
1/3 cup Dijon mustard
4 tsp paprika
2 tsp cumin
2 tsp chili powder
1/4 tsp cayenne pepper
5 cups small red or white potatoes, sliced in half (skins on) 


Preheat the oven to 400F and oil a roasting pan. Put the mustard, paprika, cumin, chili powder and cayenne pepper in a large bowl. Whisk to blend.

With your hands coat the potatoes evenly. Place the flat side down of the potatoes onto a well oiled roasting pan, leaving a little space between them.

Bake for about 45 minutes to 1 hour until potatoes are fork tender. Brush on some melted coconut oil all over potatoes before serving. Serves 4
